Horikawa Burdock Root Seasoned with Sesame

Ingredients (4 servings)
- Approx. 10cm Burdock root
- White sesame seeds, as needed
- Dashi stock, enough to soak ingredients
- Light soy sauce, as needed
- Sugar, as needed
Directions
- (1) With a scrubber, scrub and rinse burdock root, and remove any remaining black spots with the back of a kitchen knife.
- (2) Cut into 6-7cm long round slices and cook with rice bran, until you can pierce it through with a bamboo skewer.
- (3) Insert a metal skewer and pierce through along the area between the outer layer and the inner part of the burdock root, to remove the core by rotating the root.
- (4) Cut the outer layer (skin) in thin rectangular slices.
- (5) Grind the roasted sesame seeds in a mortar.
- (6) Combine Dashi stock with light soy sauce, and sugar. Then add (4), and (5) and let it soak for 30 minutes, then serve.
