Horikawa Burdock Root Seasoned with Sesame

Ingredients (4 servings)

  • Approx. 10cm Burdock root
  • White sesame seeds, as needed
  • Dashi stock, enough to soak ingredients
  • Light soy sauce, as needed
  • Sugar, as needed

Directions

  1. (1) With a scrubber, scrub and rinse burdock root, and remove any remaining black spots with the back of a kitchen knife.
  2. (2) Cut into 6-7cm long round slices and cook with rice bran, until you can pierce it through with a bamboo skewer.
  3. (3) Insert a metal skewer and pierce through along the area between the outer layer and the inner part of the burdock root, to remove the core by rotating the root.
  4. (4) Cut the outer layer (skin) in thin rectangular slices.
  5. (5) Grind the roasted sesame seeds in a mortar.
  6. (6) Combine Dashi stock with light soy sauce, and sugar. Then add (4), and (5) and let it soak for 30 minutes, then serve.
